Vegetarian Christmas menu: Fennel salad with apples & mint

For most people, Christmas is the most important holiday of the year. The food should also be something special. Finding something that everyone will enjoy is usually not that easy. Head chef Susann Losseff has long been committed to a balanced menu plan with recipes that encourage people to reduce their meat consumption. So how about a vegetarian menu this year? Here is our suggestion for a delicious starter!

Fennel salad with apples & mint

Ingredients for 10 people:

  • 3 kg fresh fennel
  • 1⁄2 bunch of mint
  • 3 apples
  • 1⁄2 chilli pepper
  • 1 medium carrot
  • 1 bunch spring onions
  • 150 g sugar
  • 100 ml olive oil
  • Vinegar to taste
  • 1 lemon
  • Salt and pepper

Preparation

Wash all the vegetables first. Clean the fennel and cut into strips. Peel and grate the carrot. Cut the apples into cubes. Cut the spring onions into rings. Finely chop the chilli peppers and mint.

Now place the sliced fennel in a hot pan with a little olive oil and brown a little, add the sugar so that the fennel caramelises a little.

When the fennel is ready, place it in a bowl and leave to cool.

Then add all the other ingredients (mint, spring onions, apples, carrot, chilli pepper) and season with vinegar, lemon, salt and pepper to taste.
