Vegetarian Christmas menu: Roast lentils
There's nothing like a delicious Christmas roast, is there? But this vegetarian lentil roast proves that it doesn't always have to be made from meat. The recipe comes from Susann Losseff from Düsseldorf Youth Hostel. Enjoy your meal!
Vegetarian roast lentils
Ingredients for 10 people:
- 2 red peppers
- 2 green peppers
- 2 carrots
- 3 onions
- 1 bunch coriander
- 5 eggs
- 500 g chickpea flour
- Salt and pepper
- Paprika powder (smoked)
- 2 kg cooked lentils
- Breadcrumbs
Preparation
Wash the vegetables and cut into small cubes. Place the diced vegetables in a large pan, sauté briefly, set aside and leave to cool.
Wash and finely chop the coriander.
Place the cooked lentils in a bowl and add the sautéed vegetables, eggs, chickpea flour, breadcrumbs, coriander and spices. Knead everything into a homogeneous mixture.
Brush a baking tin with oil and pour in the lentil mixture. Place the baking tin in the oven at 180 degrees and bake for approx. 30 minutes. Then remove the lentil roast and cut into slices.
It can be served with various vegetables, potatoes and a vegetarian gravy.
