Recipe for green spelt Bolognese
The Mönchengladbach-Hardter Wald Youth Hostel is an organic-certified environmental youth hostel. Conserving resources, avoiding waste and providing climate-friendly catering are therefore particularly important to hostel manager Florian Darius and his team. In the kitchen, where Claudia Becker has been in charge for two years, this means using regional and seasonal organic produce: Regional and seasonal organic food is served. How does this go down with the guests, most of whom are from school classes? „The children often come to us and say that it was delicious,“ says the chef and qualified ecotrophologist. This is particularly often the case when we serve green spelt Bolognese. Claudia Becker has provided us with the recipe for you. We hope you enjoy cooking it!
Recipe for green spelt Bolognese
Ingredients for 4 people
- some oil or margarine for the pan
- 100 g green spelt meal
- 2 small onions
- 20 g tomato purée
- 1 tin of chunky tomatoes
- 1 portion of soup greens (carrot, leek, celery)
- Some vegetable stock
- Salt, pepper, garlic, oregano
Preparation
Heat the fat in the pan, add the green spelt meal and sauté a little. Add the onions and sauté. Then add the tomato purée, fry a little and deglaze with the tin of tomatoes.
Cut the greens into small cubes and add. Depending on the desired consistency, add a little vegetable stock and flavour with spices. Allow the green spelt bolognese to cook slowly for approx. 45 minutes, adding a little stock from time to time as the green spelt meal swells.
For dessert, Claudia Becker recommends homemade quark with yoghurt and a dash of milk. Stir in a little sugar to sweeten. And most importantly: the chocolate sprinkles are a must!
