Recipe recommendation for the Day of the German Apple
Today, on 11 January, we are celebrating German Apple Day - for the 15th time. This day was initiated by the „Germany - My Garden“ initiative. It launched the day of action on behalf of the Federal Association of Fruit and Vegetable Producers' Organisations (BVEO) in honour of local apple varieties. But why does the apple need its own day? Quite clearly, the apple is the Germans' favourite fruit. Not only do they taste delicious, they are also rich in many different vitamins, minerals, trace elements and antioxidants.
Apple and leek salad with poppy seed oil
For today's German Apple Day, we have a great recipe for you that is also perfect for the season. Leeks are is harvested fresh throughout the winter and is therefore a typical winter vegetable. The salad is certainly also regularly available in the Düsseldorf Youth Hostel. After all, the recipe comes from Susann Losseff, head chef at the youth hostel. She attaches particular importance to healthy, seasonal cuisine that is low in meat. We hope you enjoy cooking and bon appétit!
Ingredients for 10 people:
- 1 kg leek
- 2 carrots
- 3 tart apples
- 1 organic lemon
- 3-4 tbsp poppy seed oil
- Pinch of salt
- Pepper
- 2 tsp brown cane sugar
- 3 tbsp pumpkin seeds
Preparation
Lightly toast the pumpkin seeds in a pan without oil.
For the dressing: Grate the zest of one lemon, squeeze out the juice and mix with the sugar and oil. Peel the carrots and grate into a bowl.
Peel the apples as required, remove the core and grate into the bowl.
Wash the leek, cut into rings and add to the bowl.
First mix with the dressing, then season with salt and pepper to taste and serve with the roasted pumpkin seeds.
